So hows about BF2s posts any recipes that they will be having on Christmas day and share any tips that you might know.

Anyone got any tips on how to prevent the breast of a Turkey going dry for example?

It's almost impossible to keep a turkey moist, especially if you put it in the oven.  You can keep basting it, but that requires you to constantly watch and reapply...

I've been trying to come up with a good turkey cordon blue recipe, but I just can't make it work.  Any suggestions for a cheese that goes well with turkey?

put an oil soaked towel over the turkey, then take it off to let the skin brown

A smoked cheese might go well with Turkey, not sure if it would apply to a cordon blue though.  Dutch Gouda perhaps?

OK heres one for a moist bird.  Turn your oven to full whack.  Whilst it's heating rub olive oil (not virgin, otherwise it will burn), salt and pepper into the skin of the Turkey.  Put your Turkey in the very hot oven, and immideately turn down to about 180 degrees celsius.  The initial hot oven will crisp up the skin which will also help seal in any moisture.

This guy speaks truth. That's the way to cook any meat tbh. I cook my burgers like this, wings, etc (not with the oil). Turning it up all the way seals the skin, then you turn it down low to cook the inside. Crispy, juice, perfect.
