So, me and the misses have been kicking around the idea of doing some catering. Either starting at farmers markets or private events, build up experience and perhaps someday open a proper eatery.

On a whim I contact http://www.pinemountaincomp.com/ to see if they had a slot for a food vendor and they bit.

So now I have two weeks to prepare a menu and supplies, figure out how much crap to take, etc. Luckily I do have a resalers permit, so really there is nothing stopping me from going for it. I should be able to charge decent money for tacos, dutch oven breakfasts and some barbecue and beers.

Kind of scary. Turning a whole new direction.
I know one thing, if I go there and come back with some good coin, there will be no looking back.


Any tips or advice?

That's funny, I want to start a restaurant too. I might have to move somewhere like Kansas to do it though, idk. I need an area where people are more receptive to fatty foods. The current craze in DC is healthy shit which is lame.

qft. It's different working with family. It's just that you see them so much. Spend the weekdays with them and then when you see them on weekends/holidays it's like "fucn you again!" .. I kid, I really am lucky.

I don't know how many people are going to be there, but if it's more than 150 or so make sure you have enough hands on deck to handle the crowd. It always takes more people than you would think to keep things running...you can't cook and deal with the cash register at the same time.

My boy scout troop ran a booth for this type of event for 6-7 years, 4 of which I attended. We were a pretty popular booth, but it really did take 8+ people working their asses off to keep things going during the breakfast rush, and at least that many again for the lunch rush. Consider that, and the fact that it will be a little rough the first time, and you want as many people on hand as you can if you think you are going to have lines of people.

This is kind of obvious, but don't sell shit. Word really gets around at these things about what is good and what isn't, and it makes a biiiiiiiiiig difference about what people are buying later in the day. Otherwise you get stuck with a lot of food on your hand...I remember one year competitors were selling (shitty) hot dogs for a dime because they had so many.

Baked goods always work well, and they're easy to make beforehand. You know the brownie/two cookies in a plastic bag for 50 cents. A lot of vendors forget about dessert, so even if someone bought their actual food from someone else they would come to us to pick up sweets.

Well, when she worked for me in my office it sucked.

I hope this will be different;

She loves crafts and stuff and there are all types of things we can sell. I could be the one packaging spice rubs and bottling sauces, she can deal with making it look trendy on the shelf. Also, she has been working as a manager/lead for http://www.gourmetcatering.com/ doing events with as many as 1000 people. She has contacts to assist with larger jobs, knowledge on coordinating set up and food prep.

I have the cooking gear and somewhat unique recipes. I also have a 205 gallon water tank, which will be awsm in the mountains.


The main problem; I need to get a tune up for my beast of a truck which will set me back apace before I drive the 2.5 hours, and there is a shitload to prepare in the 3 weeks leading up to it.


Anyway, I will speak to the event organizer Monday about details.

Sure would be nice to get paid for camping.

The idea was to be a ' back country gourmet ' where we either get hired by outfitters guiding rafters or groups of desert rats and church groups.
I am convinced there is money to be made going to the rv cities that bloom in the winter in the Mojave.

My parents ave owned, operated, and sold various businesses.. I have lots of experience here. If I were more responsible when I was younger they probably would have tossed me one of them.. shame .

It's a massive gamble ATG even when the economy is good.  Its in the leisure industry and one area where people pull the strings back and not fork out and treat themselves.  However, if you can offer a good product at a competative price you have a chance.  I wish you good luck but with caution.  My Gf's place recently went down the pan, doing sarnies and coffee's as people made their own to take for work due to the recission.

In the UK a Dutch Oven is where you fart and pull the duvet over ya head. Whoever lats the longest wins.

Ouch!  I've worked with my ex for about 5 years, before she was ex.  My elders had a bed and breakfast type place.  From both experience it's hard on the relationship.  Everyone is different, just make sure you both draw some lines before hand.  If I understand for now it's a one shot and then you'll see.  Go for it, experience is worth living it.  Make a couple of those to see what could be the catch / pit falls and debrief them one after the other.  Each business has different models you can draw them on.  You are an entrepreneur (if that word is english) I think you know what I mean; observe, correct / re-aim, debrief.  Rinse & repeat.

We have different carters stop by our office on occasion. The food they prepare is not fancy and pretty much straight forward to make. My only gripe is when they "try" to make chinese food, I wonder why they are compelled to make it spicy. Just remember NOT ALL CHINESE DISHES ARE SUPPOSE TO BE SPICY **AS HELL

Also if you use shrimp on any of your dishes, make sure it does not smell like fish or bad foot odor. Use FRESH shrimp or no shrimp at all.

The various carters we use charge per person ($10.00) per day. I would recommend to charge more because businesses will want to keep the price down. I think we would of been charged $15.00 per person but talked the carter down to $10.00.

make sure its tasty,use only the freshest stuff you can get and make sure you never run out of food.  those are what i learned from doing catering for the last 7 yrs.   we have many catering places here but what made the one i worked for stand out was those 3 things.  to many simply run out of food. they cut it too tight and it extra people show up they couldnt feed them,that's very bad for your business rep.

price is another if your a little high then they talk you down a bit they think their getting a better deal that way. also give em a little like we would give em half off the desserts or sometimes give them the desserts free.   

you would be suprised how well that works. like getting a few cakes/pies from sams club  fairly cheap and not charge them.  you make up for some of the cost by uppin the cost of the dinner.

ex:say $10 would be a low price but you charge em $12 and tell them dessert is included. they think there getting a major break. but its not costing you squat.
