Well Owen Lars is mentioned in the films, but not Beru's second name. that comes form the novels and Galaxies.

I think some people might differ on the Jar Jar comment however

As I recall, the cover story Kenobi told Luke was that 'Darth Vader killed Luke's father, Anakin Skywalker'.  So, going by that version of the story, it'd make sense for the boy to keep his father's last name.

Not exactly the best concept for a witness protection program, but..  neither was living on his father's home planet, living with relatives, or living just down the road from Anakin's old teacher.

It would be kinda like Al Capone's son being taken away and sent to Al Capone's home town of Littletown, Ill and living under the secretive name of Alfred Capone Jr.

I mean seriously, the skywalkers are like the only humans on that planet and probably the only thing named skywalker.  Darth Vader and the empire are pretty stupid if they can't find them.  You'd think with all of that high-tech gadgetry they had, surely they had like a galactic citizen database or social security numbers or something.
