Kay, so I'm wondering if anyone knows of a desktop manager that has support for separation between monitors,

I want my primary monitor to stay on the same screen all the time, but I want the ability to switch layouts/apps with a hotkey on my Music/MSN/research monitor.

Where in the settings/interface do you define the keys/settings for virtual desktops?

There should be a hotkeys tab in the settings, if I'm not mistaken?
