That is because the gamers don't really know real realism. They think they do, but they don't. I don't mind realism, as long as they have the fun aspect. I like to play these "simulator" style games because it allows you to try to get as close to doing the real thing, behind a computer, without actually doing it, due to various limitations like: I'm not in the military. I don't have the money to buy and tune a super awesome race car to drive on a track. Theres no way I would be allowed near a fighter jet to do stunts on. etc.
But yes, it's a very niche market, and it's probably better that way.

Ditch the god-damn "everything must be brown" colour scheme. Add some crazy and fun mechanics.
A shooter based on the platforming mechanics of something like Ratchet and Clank would be awesome.
