I use whatever's best for the map or situation, and I mostly use unlocks, not basics, so it's pretty much the same for each army:
Assault - G3 (don't really like the grenade launchers, love the G3's power)
Anti-tank - DAO-12 for most maps, sometimes the basics for wide open territory.
Engineer - Basic shotgun for USMC and PLA, otherwise the MP7
Medic - G36 most of the time. L85A1 on open territory for sniping with (Wake, Surge especially)
Spec-Ops - G36 (Hate the wasted unlock that is the SCAR-L)
Support - MG36 or basic for infantry maps, PKM for open maps and chopper hunting
