Concerning aircraft cannons, the F-35B uses a 25mm Gau-12 with 220 rounds and the J-10 uses a 32mm, the Mig-29 has a 30mm GSH, which should be the same as the Sukhois.

the only 50 cals in this game are the M95 sniper rifle, vehicle mounted machine guns, the APC's machine guns

i think that's about it.... unless the L96A1 is a 50 cal... is a 7mm a 50 cal?

If you're looking for the best example of a .50 cal or what is most commonly associated with 0.50 cal.  That would be a Browning Machine gun.  More or less the same machine gun used in WWII.  The US mounted it on everything, The P-51 had 6 of them.

My favorite was the AA unit which was four 0.50 cals on the back of a half-track.

The M-95 fires a 0.50 cal round.

As far as the Desert Eagle is concern, there are different models 0.38, 0.44 and 0.50.  These are different rounds then fired by the M-95 or browning as they are pistol rounds (obvious statment).

The 20mm they used in WWII on the airplanes were good, but a .50 cal was a better weapon to arm your aircraft with.

.50/12.7mm was the most popular caliber size used on fighter aircrafts during WW2, especially by the Allied, the Soviets used larger cannons like 20mm, .50s were also used in Korean war on the F-86 Sabers, and by then the Mig-15s had big ass 23mm and 37mm's. I've seen a real 12.7mm small caliber AA round many years ago at one of my mates place, his father was a pro-soldier and he brought it back from Vietnam, that thing was about 13cm long, it was said that one hit was enough to rip your whole limb off.
