Mine, in no particular order:

Angkor Watt, Cambodia
Macchu Picchu, Peru
Cairo, Egypt
Great Wall/Forbidden City, China
Antartica

Bear in mind that I've done a few of the main ones already - Havana/Che Guevara Memorial, Cuba; Jerusalem, Palestine; Petra, Jordan; Paris, France; Rome, Italy; Istanbul, Turkey; New York, USA; Niagara Falls, USA/Canada; Oktoberfest, Bavaria; Pamplona Bull Run, Basque Country...

Mayan ruins in Guatemala or Mexico would be high on my list also.

SA is a good place to go the Cape is probably second best to Durban when it comes down to sharks, but you can go "Nose Touching" in the Cape.

Ive looked into it for about 10 years now, hence sounding like I know the sharks (blue'ies n white'ies) I have a daughter so it's about my only remaining ambition.
