Of course it will work.
But as Coke said, why not go for an 8800 series card? You could get one for less money than 2 7950GT's.
edit: DX10 only works in Vista, yes. So if you aren't planning on installing Vista, then I guess you shouldn't worry about it.

$500 for 2 of these or $300-400 for 8800gts. hmmm.
The thing is the 8800 will give quite a decent amount of future proofing, as I'm sure at some point in the future you will end up going to Vista as DX10 becomes more mainstream.
Also I'm pretty sure that an 8800 will outperform 2 7950 GT's anyway and will cost you less...
