You don't want Ultimate.

If you don't know why you would need it, then you won't need it. Get an OEM edition of Home Premium.

If you really want your OS to last a long time, get a 64-bit version - which will have occasional issues at the moment, but will be a better choice for the future.

the only thing about 64-bit is i'm planning on buying a Core 2 Quad and i dont know what apps run on the 64-bit version

Pretty much all apps run on the 64-bit version.

From an application perspective it's still IA-32 code, just with extensions, kind of similar to SSE.
