Burning shirts wont work, Burning anything other then money also wont work. But what will work is if you make it look like the employees were trying to take some of the money, By scattering it in a path leading out the fire escape. You need to make a money path from the center of the fire that gradually thins out when reaching the door, And you would need to burn all denominations of bills to make it less suspicious.(20's and 1's are the best because they are the most common)

But tell me what then? How will you escape when the fires roaring and you prepped everything? How will you get out with the loot? You cant just run down a fire escape carrying a big bag! That would look too suspicious. What you gotta do is wear protective clothing and make it look like you're part of the fire brigade(If they aint there already, If they are there dont go outside aim for the backdoor or where it's less crowded) Or dress up in a Hazmat suit and stuff the cash underneath your airtank in your supply bag. There are flaws in each plan that can lead to disaster! So that's why the best bet would be to use the sewers and find a safe spot atleast 10-20 blocks away from police activity to get out in, Make sure you have an electric company van and some uniforms for your people to wear under their masks, Bonus points if you make it look like everyday work.
