During the 1800's when steam ships were common they would gather cow patties to use as fuel. They stored them in the hold below decks.
When salt water soaked the cow turds methane gas built up in the storage compartment, a worker would go down to the hold with a lantern to get some more fuel, the flame would ignite the methane and the whole ship would explode. Seamen quickly figured out what was going on and began storing the fuel above decks.
To make sure there was no confusion they labeled the boxes ' ship high in transit '. Which promptly was reduced to its acronym.
