If i uninstall bf2 it asks me if i want to delete profiles and screenshots aswell, if i do delete them will i still be able to retrieve my account once i have re-installed it?

You may as well keep the profiles, all it is, is a file with your key & graphics settings.
save your profile folder
then put it back after re installing
all is there like u never uninstalled it

Your account will be stored on EA's stats servers. Only thing saved on your system is screenies and settings.
