As a result of this thread: http://forums.bf2s.com/viewtopic.php?id=60142 and the loads of PM's I got asking how to do it, I decided I'd make a thread on how to do it
First of all, you need this program:

This is IpodWizard which allows you to change various things on your ipod, such as images and fonts.
Here is a screen shot of the UI:

You must connect your ipod to your computer so it displays the "do not disconnect logo"
Now, you must load your Ipods firmware directly from the ipod itself, as it's not longer possible to do so via the Ipod Updater package as from Itunes 7 onwards, it updates your Ipod via that.
So, where it says "edit mode" you must click on the drop down menu and click "Ipod" Then click "load ipod firmware".
Once you have done that, you're now able to edit anything you want.
!!HOWEVER!! Do not mess about with stuff that you dont know about, otherwise you may end up screwing your ipod up and reinstalling the firmware, which means a full reset.
Once you have the logo you want to replace (The "Do not disconnect" logo is number 368 on the index on my 5.5g ipod) click "Load Bitmap" and find the image you want to replace the default one with.
NOTE!! You must make it so it's 100x100 pixels, otherwise it will not fit.
Once you have done this, you must click "WRITE"
The Ipods firmware will then be updated. Once it's updated DISCONNECT via Itunes or eject in windows and it will restart automatically and your logo should be displayed once connected again.
