A big splash of really hot cooking oil poured itself over my finger, which now feels like someone has driven a knife through it. I'm concerned that I'll lose feeling in that finger, or it will leave an unsightly scar.

Does anyone have any words of comfort/assurance/experience?

Well, it could be both.  It could leave a really unsightly scar and you could lose feeling in the finger.

...so there's that.

Run cold water over your finger....cover in cling film.... go to hospital to get it checked.......

If not try to keep it cool and moist or the skin will split and come away on a dry dressing

Water... running water.

In Morocco, my brother accidentily touched a very hot tajine pot. He got a nice blister. I'm not sure about oil though...

If in doubt, go to a 24hr medical centre... or if it really hurts, the hospital. If it does split the skin and get infected, left untreated you might have to loose the finger.

clean the wound and run loads of cold water over it. put on some burn cream. put a dressing on the wound. if the burn is big you should probabely see a doc. also as with any wound you should make sure it stays clean. infections can turn out really nasty

EDIT: as for experience. my godfather has a motorcycle accident some time ago and the hot exhaust pipe of the  bike burned a huge hole into his thigh. because he way lying underneath it and was hurt he couldnt get the bike off him. now an area of 5cmx15cm is made up of completely scarred tissue. morale: it could be a lot worse for you

once upon a midnight dreary, while i pron surfed, weak and weary, over many a strange and spurious site of ' hot  xxx galore'. While i clicked my fav'rite bookmark, suddenly there came a warning, and my heart was filled with mourning, mourning for my dear amour, " 'Tis not possible!", i muttered, " give me back my free hardcore!"..... quoth the server, 404.

i have a good history with fire:
i burnt my hand with napalm. wasn't fun.
also burnt one hospital building.
try to extinguish fire with insect spray,
shoot friends with water pistol filled with fuel and a lighter on the tip.

but since i moved to australia, i quit playing with fire.

Whatever you do dont put the burned spot directly under a running tap, it will only spread the burn, rather fill a glass or bucket with cold water and slip the hand or whatever into the bucket !

If your concerned that it will lose feeling go see a doctor unless you already have.

Funny burn story but stupid- A couple of my friends were playing with a de icer or something u stick in your car door key slot. I have no idea what it was called. I held it on my arm for like 2 secs lols and I have a permenant
scar there. Stupid I know lols. Another one we did was not really with fire but we wet a spot on are hand put salt on it and then an ice cube. We then put salt on the ice cube. After a couple of seconds 15 or so it starts to burn lols.

I hope it gets better man burns suck.

Wash it very good, then see if your Dr can prescribe anything like silvadene, that we have in N. America. I have had 2nd and 3rd degree burns. In both cases using that cream has left me with no scars.

Don't use Cold Water, use luke warm and gradually turn it cold, Loss of Feeling, you shouldn't have any unless it was a 3rd degree burn and the nerve endings are gone, Scar, depends, how big the blister is and how well you take care of it.

Edit: spelling

I've lost feeling in the finger already because the layer of skin has actually become separated from the finger beneath. I'm just hoping that it won't be like this forever. Is it natural for it to sting after the initial burn?

it should be fine man, you loose feeling because of the blister(it makes an extra layer). But if it is that bad go seek medical aid, I have had plenty of burn that have made wicked blisters(Passing camping with no shirt on) and I have little or no scaring)
