Is the file protected? A lot of PDF content is uneditable or requires a password to edit it. There are ways round this however.
And if it's protected using Acrobat Professional is NOT a way round it. There are quite simple ways of removing the protection, I've done it before (cutting and pasting big chunks of tcl scripts), but I can't remember exactly how. There are lots of utilities for it, see if you can find one.
However, I think you'll need Acrobat Pro to edit it whether it's protected or not.
