I have a Western Digital 74GB 10,000RPM HDD with 8MB cache.  I'm going to get another one, but the only one I can find is what seems like the same HDD (10k rpm, 74gb, WD) except this one has a 16MB cache.  Will these drives work in RAID 0 or not?  Thanks in advance

Yes. They should work fine. (the usual caveats apply)

Why should that be an issue?

You can use totally different drives in RAID0, they will just be limited to the worst spec of each drive in the array.
