What exactly are you looking for?

You're going to need a video card with dual output plus a video card in a PCI slot.

Are you sure? Because I you can only have one monitor with SLi enabled (unless they've updated that).

I saw a demo of an SGI Onyx II back in the 90s.  It had a flight simulator with three monitors and each showed a different view from the plane, VERY cool for the time. 

I think you'll start seeing some games make use of multiple monitors to enable better usage.  I'd like to see the game browser on one and the actual game play on another.  That would be sweet to not have to mess with menu's while in game.
