For Russia just keep building Strelets and wave them to the enemy base. They're the cheapest infantry unit in the game. If you're anything else, make it Musketeers or your country's equivalent. Melee Cavalry would be a very good addition to that, as would field guns.
I was so dissapointed with AoE3... doesn't live up to 2 at all

My main tactic is to uninstall AoE3 and play AoE2. What were they thinking when they canceled all the nifty formations they bragged about in dev interviews?
I always use Dutch, being a swede, and use the Factory cards and get two manufacturing plants, one pumping out wood, the other going for food.
That way you get wood, food, and money without using up villagers in your unit population. I also use the Fort cards, and set up forts near the trade route stops, and get XP via the train.
It's tricky to balance all of it and keep it from being destroyed, but when you figure it all out, you own.
