Could sell desktop + peripherals for £650-£700
Could buy laptop + peripherals for £700

I'm really considering it. The portability is excitingly cool and I would really like the idea of a large change like this. I know the laptop isn't for gaming for the 8600M is actually able to play the likes of Half-Life 2 on high with AA with no problems and so on so that is another plus. I've always liked the idea of a laptop and I'm veering away from gaming and so on more and more.

Thoughts?

Then go for it. It seems like games are really the only resource hogging applications these days (unless you do high-quality video/audio editing)

Agree. If you're not going to be gaming much, a laptop like that could do it.
The idea of any hi-fi system is to reproduce the source material as faithfully as possible, and to deliberately add distortion to everything you hear (due to amplifier deficiencies) because it sounds 'nice' is simply not high fidelity. If that is what you want to hear then there is no problem with that, but by adding so much additional material (by way of harmonics and intermodulation) you have a tailored sound system, not a hi-fi. - Rod Elliot, ESP

Haha yes my video transcoding days are over thankfully (that Core 2 Duo handles anything you throw at it..!) I won't be doing much gaming in the future and so on so I think this might just work!

Sounds perfect for what you're wanting to do:

portability (a huge plus point)
will manage games acceptably if you ever want to have a dabble
nice sounding spec (love the fingerprint reader!)
c2d will handle anything normal (ie not industrial software!) for a long time yet

Go for it!
