Ethereal, or the contemporary and more frequently updated Wireshark, are packet sniffing and dissecting applications. They're designed to intercept and list traffic on a given network interface either promiscuously or given certain criteria, allowing you to view the traffic supported by its dissectors in an easily read format that allows you to analyse your traffic for the sake of analysis, or to discover or locate certain phenomena or unwanted traffic.

Edit: If you want to search for people leeching on your wireless network connection, simply open Wireshark, go to Capture>Options, select your wireless network card from the drop-down box, and check "Capture packets in promiscuous mode". Let it run for a while whenever you suspect intruders, and look for internal source IP addresses that aren't assigned to any of your own devices.

Anything sent in clear text would show up as clear text. Secure logins and pages such as Internet banking sites would be encrypted and would not show up in clear text in Wireshark, but this thread, for example, would.
