There is a problem with frame-buffering in quad-SLI solutions (primarly a DirectX problem). So no you probably won't get anymore FPS with quad-SLI. Quad SLI (I think) is limited to 7950GX2 cards as well. Quad 8800 doesn't' exist (at least I don't think so). What I think you get is image quality improvements (AA, filtering). The additional boards (7950 only) split the load of AA and Texture-filtering. If the games are load balancing friendly.
Unreal engine games = no (not too friendly to Texture Filtering or AA).
Deferred lighting = another no (not too friendly to Texture Filtering or AA).
Half life/source engine = no (I don't think so).
BF2 & 2142 = moderately yes (but crossfire 1950XTX mode produces about equal results at similar high resolution modes).
2-way & 3-way SLI on a 8800 GTX or Ultra are compatible with DirectX frame buffering - from what I understand.
