I'm OC'ing my 7900GS, I've OC'ed it successfully but when I restart my computer it resets to its default clocks.

WTF?! What do I have to do to keep my clocks from reseting?

what are you over clocking it with?  what program?

When you go to overclock it, check the box that says keep these settings at start up.

I'm using the nVidia Control Panel...

give ntune a whir, you can get it from nvidia

also do you shut down through the os, or do you hit the power button until it turns off?

ok, well shutting down through the os should save your settings in nTune, you're running xp right?

nTune doesn't save settings, if my memory serves.  Use RivaTuner for good graphics overclocking.

The trick is to use RivaTuner and not nTune or nVidia control panel.  Rivatuner will load your specified clocks at startup, no BS hassle like with nTune.

Seems I have it already on it because it wanted to uninstall it..

So I will try Rivatuner...

Is there a way the control panel will not override the rivatuner?

The idea of any hi-fi system is to reproduce the source material as faithfully as possible, and to deliberately add distortion to everything you hear (due to amplifier deficiencies) because it sounds 'nice' is simply not high fidelity.
