What would be a proper max GPU temperature? I've currently set it to 60 celsius, or is that a bit paranoid?

Also does anyone here have some experience with ASUS SmartDoctor and SmartCooling and perhaps some tips on how to set them?

What card?

Depending on the card, different temps will do. 60C is very paranoid, any card will do 75, DX10 cards will do 90+.
The idea of any hi-fi system is to reproduce the source material as faithfully as possible, and to deliberately add distortion to everything you hear (due to amplifier deficiencies) because it sounds 'nice' is simply not high fidelity. If that is what you want to hear then there is no problem with that, but by adding so much additional material (by way of harmonics and intermodulation) you have a tailored sound system, not a hi-fi. - Rod Elliot, ESP

When pressing the "defaults" button SmartDoctors claims my factory defaults are 796Mhz GPU and 1386Mhz RAM, but they should be respectively 800 and 1400; is that just a normal deviation?

Yeah that is normal deviation! Honestly, as long as it isn't peaking into the high 60s / low 70s (celcius) in idle it isn't too much to worry about. To give you a perspective, my X1900XT is sitting idle at 63C.

That is really ok. Basically temps stress the core and the capacitors, so it works at higher temps, but just not as long. 38C idle is excellent, and <70C load is excellent as well.
