I didn't figure this out myself, but found it somewhere on the net.
Anyways, there are two little tricks I found. (Your iPod doesn't need to be jailbroken either)

1. Go to your home screen. As you know, double tapping the home screen button brings up the music controls. Double tap the homescreen button, and right when you start to see the controls come up, quickly hit the sleep button on top of your iPod. This will make the screen black.
Turn it on again, and you'll notice your controls on the unlock screen. Now you can control your music without having to unlock your iPod with the slider.

After you get that far, slide the unlock slider half way, then double tap the home button. This will put the controls neatly underneath the clock for you. It will remain there for as long as you don't unlock your iPod.

2. For this second trick, slid the unlock slider half way, then drag your finger over the sound bar slider. Nothing will happen at first. Take your finger off the volume slider and then turn the volume up again. You will get a cool little speaker on your screen with some volume bars underneath it.

Pretty cool

Send me your iPod Touch and I'll tell you if it's cool or not.

Yea, it's sort of tricky. Hold the slider half way, and while still holding it, move the volume bar. The unlock slider will move back, and the volume slider won't move. Move the volume slider again to change the volume, and it should work.

I can confirm both of them to function as decscribed

as for the speaker, heres instructions elaborated

With the iPod controls on your unlock screen, slide the unlock bar half way, then WITHOUT LETTING GO, drag your finger up to the volume bar, and move it back and forth...

That explains it better. But I love being able to double tap my home screen and control my music without unlocking it.
I think the unlock feature should be nerfed anyways. That's why they have the screen lock option.

not really. one is to reduce battery consumption and save power. the other is to keep people from using your ipod without you knowing aka protect your iPorn.
