Ipod does its best to not let you take any songs off period, PS3 or computer...
The songs are renamed random alphabetical titles, then the albums are mixed into random folders...again with random alphabetical titles (like ADCGF)
If you enable the use of your ipod as a storage device (You may have to use itunes, its an option somewhere...) and dig around the folders on a computer you will see how they do it. You can copy files out of those folders, but its a pita to get an album because you have to find all the songs and there will only be a couple in each folder.
Your best bet is to use windows, when browsing though a folder of MP3s it can read the ID tags, click view->details and you will be able to see the info on the song.
If you want to copy a lot you could probably copy all of the files into the same folder (you may have to rename if it wants to overwrite I dunno if they use names more then once) then use a music player to sort/rename them based on tag info....I think iTunes can actually do that...
PS3 should read it the same as a computer does, as long as you enable it as a storage device. Then you could use it straight off the ipod, but you probably would only be able to pick random songs unless PS3 displays the ID tag info too.
Sorry for the lack of specifics, but its been a while and I don't have the time to go back through and figure it out. You should be able to though.
