Can anyone explain to me why. 
I have the PS3 hooked up to the tv with component.  In the ps main menu it is in 1080p, but when I put a blue ray movie it comes up as 1080i.  Why?
Is the PS3 hardwired to show in 1080p with only the HDMI?

If you don't have the HDMI connection to your tv of course you won't get a HDMI quality picture.

TV manual says it excepts 1080p over component

You might be able to get 720p if you have a good component cord but the only way to get 1080p is to get a HDMI cable.

If you are using a component cable, then you aren't getting either.

On the change from 1080i to 1080p would have to do with the source content, or how it's being converted by the PS3, I think. Anyone know more about the PS3's handling of progressive/interlacing video?
