New thread idea one of mine is a grilled cheese

Cheese, Texas toast, butter, potato and olive oil..

Well you make a grilled cheese how you normally would but you lightly fry real thin pieces of potatoe to put in the middle to add crunch..

Doug's #7 Pizza Crust
When I was in college, I had a hobby where I was developing and trying out different pizza recipes, some quite gourmet.  My first one, "Doug's #1" was a disaster.  The next three were OK, but I don't really use them.  But, I did eventually develop about 5 recipes that I like, including a deep dish one.

"Doug's #7" is my favorite.  It has medium and doughy crust with a very yeasty flavor and some sharpness brought on by the beer.

If you are not that familiar with cooking, this might seem like a nightmare.  It is not entry-level.


Yeast mix
* 3 packs of yeast
* 1/4 cup of 105 F water
* a Tablepoon of flour
* pinch of sugar

Mix together and let sit for about 10 minutes ... you will notice it is frothy after 10 minutes.

* Yeast mix
* Tablespoon honey
* Tablespoon olive oil
* about a 6 to 8 ounces of flavorful beer (I like to use Grolsch)
* 1/4 cup water
* 1/4 cup wheat flour
* Knead in white flour or semolina flour (typically about 2-3 cups) until the crust is bouncy and doesn't stick to your hands.  Keep kneading for about 2-3 minutes.

Cover with a thin, wet towel and let sit for about 45 minutes or until it doubles in size.  Typically, I cook the crust for 4 minutes on 550 F, then spray it with olive oil (to keep the tomato sauce from making the crust soggy).  After that, put on whatever toppings and sauce you typically like and put it back in the oven for about 4 more minutes.

I've got some pretty simple recipes I do, but are amazingly tasty:

Chicken and Rice Cassarole
1-2 pieces of chicken
3 cups of steamed white/brown rice (white is better for this)
1 can of cream of chicken
shreaded cheese of your liking (cheddar or colby is usually good)

Cut chicken into small ~1 inch pieces, coat all chicken with Bertoli olive oil and  cover with Season All and chicken rub (spices).
Brown chicken
Preheat oven to 400-500.
Spoon in steamed rice to cover half of a baking dish (13x9 is ok, but shorter, thicker is better)
Spoon in cream of chicken on all four corners and then a thin layer throughout the rest
Spread cooked chicken on top and even it all out
Spoon the rest of the cream of chicken all over the top, evenly
Throw as much cheese as you want on top

Throw in the oven until cheese is browning, or, 10 minutes and broil for a few to make the cheese really crispy.


Cannot fail with this!

Home made Bruschetta is delicious if you have the right ingredients -

Cut some french baguette bread until you have a suitable size for your self. (preferably length ways) Then grill until golden brown. While it is grilling, get a clove of garlic and take off the skin until you are left with the garlic itself. Also *grate* (important not sliced) some cheese - I find red leicester the best. Once the bread is golden brown and crispy, take it out and butter it. Now rub the garlic through the bread for about 10 seconds and put your grated cheese on. Put it back in the grill to toast until the cheese is bubbling / melted. Now get some fresh tomato and put it down. Last, sprinkle it with some thin pepper and you've got yourself one delicious meal.

Not expensive, quick and easy, not too messy and healthy.  Also it can make a chicks knickers fly off her in by the time you can say "Garlic Bread".

Watch you don't burn the bread - that's why I recommend grating the cheese because it melts so much quicker. You might have some garlic breath afterwards so have some mints handy,  but it is just so delicious.
