From what i understand, the Itouch only accepts .mp4 videos. I have some videos that are .avi format and was wondering what settings i should encode at eg. 640x480 or 480x320, 25 or 30 fps, what bitrate and so on to get the best filesize to quality ratio? Can anyone shed some light on the situation?

30FPS and 640X480, around 512 bitrate is what i use. Works well imo.

Use Videora iPod converter, it'll give you default iPod Touch settings that I use and theyre really good quality

Videora as Winston said for .avi files.  Use Handbrake if you want to convert entire movies in DVD structure (VIDEO_TS and AUDIO_TS subfolders).
