Why do you want 16GB RAM? What's the point? Especially when it's FB RAM, which isn't exactly optimal for gaming (just like all these error checking RAM technologies). Xeons for gaming? Why?
A Quadro graphics card? Hmmm, sounds like someone is just looking at the prices on the cards instead of actually having any clue what they're talking about. Quadros cost loads, but are designed for OpenGL stuff and CAD. NOT gaming.
On the subject of Mac Pro graphics cards - there are all sorts of horrific issues with the 8800GT in Mac Pros which can cause horrendous instability. The upgrade kit for non-Penryn based Mac Pro systems simply doesn't work properly. It is a known issue (Apple internal Knowledge Base only - because they won't admit to it) and the release of the 10.5.4 install disk was designed to combat this problem (though it's still pointless and unless you get a Penryn there's no point in having the upgrade because the card performs worse than the 2600XT).
I use these systems pretty much every day. They're not very fast. I've always been astonished by how poorly Mac Pros actually seem to perform in general.
