There are so many simple workarounds that a simple Google search will give you all the info you need.

For instance, this is a nice and quick how-to: http://www.google.com/search?source=ig& … ipod+touch

With an open player, you don't need a workaround. It's like selling USB sticks and requiring you to install the software to get to put shit on it.
The idea of any hi-fi system is to reproduce the source material as faithfully as possible, and to deliberately add distortion to everything you hear (due to amplifier deficiencies) because it sounds 'nice' is simply not high fidelity. If that is what you want to hear then there is no problem with that, but by adding so much additional material (by way of harmonics and intermodulation) you have a tailored sound system, not a hi-fi. - Rod Elliot, ESP

Granted. But still, for an all around package, the iPod line up is still the best on the market (with the exception of perhaps the Shuffle).

Can you build playlists and such on the computer like you can in iTunes and then move the playlists over to the player? Or do you have to organize it by folders?

No idea. Anyone who uses iTunes by their own free will should be strangled no matter what.
