watching idiots run into my claymores over and over. It was fun watching the same 3 guys die that way on my way to my basic explosives ordance badge.
shock paddles- nothing's better than giving the enemy a massive cardiac arrest and possbly making them soil their pants.

Blowing choppers away, from distance, with a tank shell. Also enjoy sneaking up behind people, and rather than knifing them, whipping out a scope, aiming at their ears, and pulling the trigger.
I love road kills, i remember i had a humvee with 3 ppl in it, one guy on voip was laughing because all he saw was 4 bodies come flying over the roof.
I also like placing a claymore behind a sniper on a roof, in a tree etc. and shotting one round with my pistol, they move and blamo!

Hmm, my favourite methods..
Knifing, running them over in a jeep, tank etc or possibly the best (you need to be good at flying) flying really low and hitting people with the helicopter to give you a "road kill" with the helicopter..

Personally I like seeing an enemy jet flying slow and low at my tank shoot a bit high and boom. OWNED!!! shooting down full black hawks on mastuur city with the tank is awasome too...

Somewhat offtopic, but I've found a great way to grief those runway camping jet pilots. Grab a transport chopper and fly towards them while aiming downwards. Right before impact, hop out and watch them all jump in at the same time because they were holding "E". Either that, or they get smashed by the chopper.

Roadkills. There's a certain joy to seeing your victim's body flying over the hood of your vehicle. I especially like to ram a person on foot through an opening in a fence. They shoot through the hole like they're out of a cannon. FLOOM! 
Sniping a chap while he's sprinting is also gratifying. Especially when they animation shows them flying ass over breakfast to the ground. That and countersniping a guy off the side of a hill, and watch the body rag-doll it's way to the ground.
