So I'm sort of getting into cooking now, nothing really special but I would like to learn some new recipes for, well, anything really...

So if you know of some good recipes to share that would be pretty cool

Kudos for recipes native to your region (It would be interesting to taste something completely new)

Portuguese recipe my grandma always uses:

Pork Cacoila

3 lbs. of pork blade meat, cut into 1 and 1/2 inch. pieces
3/4 lb. of pork liver, cut into 1 and 1/2 inch pieces (this you can leave out if you want)
1/4 cup of vinegar
1 tablespoon of salt
2 tablespoons of chopped red peppers
2 tablespoons of pickling spice
2 tablespoons of whole allspice
5 bay leaves, crushed
5 cloves of garlic sliced thin

The ingredients from the pickling spice down are for a spice bag. You will need cheesecloth for that.

Put the meat into a large sauce pot. Add water to just below the top of the meat. Add vinegar, salt and red peppers to the pot and mix well with a wooden spoon. Wooden spoon is key. Not sure why. Grandma thing I guess.

Wrap the spices and garlic into a piece of cheesecloth and tie it off. Bury this in the middle of the saucepan. Marinate in the refrigerator at least 24 hours.

When your ready to prepare the caciola simmer for 3 hours on low heat. Cook until the meat is tender. Remove the spice bag when broth is flavored to your liking.(it'll be around 2 hours). Makes sandwiches for a week and a half.

Kind of takes a long time to make...but you eat for a long time afterwards. It is worth it.

One I made tonight;

Open Faced Sloppy Joes and Tatortots;

Brown one medium onion and one clove of garlic in one tblspoon of vegetable oil.
Add 1/2 cup red bell pepper and 12 ounces of lean ground beef, or roo for you kiwis. Brown.
Add 1/2 cup catsup and two tblespoon worchestshire suace, simmer for 20 minutes.

Take tatertots, spray with cooking oil spray, sprinkle with onion powder, garlic powder and salt. Bake at 400 for 18 minutes. Remove, place sliced cheddar cheese over the potatoes and melt under broiler.

Serve with sour cream and catsup. I suggest potato buns.

I always thought they put jelly on the sandwiches but you raise a good point. Did they just mean jam?
