If you are the right one for her I'm sure she would have given you signals already ...

One way to test it out would be to exchange a normal friendly hug with a kiss on the cheek for example ... when and where to do it is more delicate, women tend to fall for you easier when in an environment they find exotic and Italy for most non Italian girls is such a exotic place ...

First of all, going for work experience with a group of friends including one you have more that friendly interest in, can seriously backfire. It can get seriously messy, and I mean seriously here. Trust me, you won't even see it coming.

That said,

On conundrum 1: Don't bother about ruining a "good friendship", because given the situation it might get ruined regardless of your efforts to avoid it. The risk is already imminent; you might as well make any move you dare, because it will make a negliable difference if you don't

On conundrum 2: If you do intend to act upon this do it ASAP! You're right about not taking any action during Italy, but if you do it afterwards things might go awkward during.

Have plenty of fun with her over there. Try get her to go alone with you (not in a shady way that she starts to suspect you for hitting on her if she isn't interested in you after all) to see stuff over there. Once you get back home, tell you had fun with her over there and ask if she'd like to go out and do stuff with you again. Ofcourse if you get things rolling over there, the merrier, but start easy so you won't fuck up the rest of the trip. Make sure she notices you. Long looks in her eyes with a sneaky charming smile is good, and a surprise flower is always a sweeper. Chicks dig the salad for some odd reason. It's all about the psychology man

Definitely, and the flowers don't even have to be real! If you happen to be on a remote location where there are no flowers, just paint her one; works just as well
