When I try to open those files in Windows Picture and Fax viewer, they don't appear. It just says No Preview Available. Same with the .PNG's in the Level folders. How do I view them?

1) Try using a REAL graphics suite, such as Adobe Photoshop or Paint Shop Pro X ...
2) Some files won't open as normal images because they are designed for a game, not for your personal viewing pleasure.

Cyberwolf is correct, they aren't normal/true PNGs. It's unlikely that you'll be able to open then in any normal program.
You'll need to rename them to .DDS, most aren't even PNG format.
Use Photoshop with the Nvidia DDS plugin. http://developer.nvidia.com/object/nv_t … tools.html
