I have finally utterly perfected barbecue chicken.
Key is slathering it in sauce and cooking at low heat, about 200F for about two hours in an enclosed foil tray. Then you slather it again and slap it on a hot grill for just a minute or two per side, long enough to carmelize the sauce and get good grill marks. Comes out fall of the bones and infused with flavor.
Win.
