Generally, GPU's don't bottleneck CPU's, it's the other way around. However, an 8600GT is incredibly underpowered for a system like that.
I'd go with a GTX 285 if I were you, but I can understand budgets.

lol, that makes it seem like kind of a shame that I'm only going to get a GTX 260. But $350-something is much too much for me to spend on a graphics card
And for once I feel like I've been complemented on the power of the rest of my machine. Oh the joys of finally making money and cheap overly powerful hardware.
