Well mostly the stiffness of the boot, a soft boot is good for casual/park riding, because of good flexibility at the ankles. Mid-stiffness boots are jack of all trade, so you can get a little bit of performance out of it, while not sacrificing the flexibility. Stiff boots are all out performance, where the time between initiating the turn and the board going on edge to turn is basically null, because the entire boot moves immediately, where a softer boot will flex a little.
edit, also mid to softer boots I find are better for powder, too stiff and you can't float on the snow well enough, you just keep rolling onto your edge when you adjust your weight.
