Ya well, I prefer to grate my own cheese. Just tastes so much better to me than the pre-packaged kind.

e: All I do is stick the cheese grater in the dishwasher and it works fine.

Use a sharp knife and "saw" it. Don't just press down on the knife. Simple enough to get even slices.

protip: Harder cheeses (Parmesan, romano, asiago) will clean fine off the grater. Softer cheeses (bleu, brie, cheddar, mozzarella) will not.

Step 1: Get a good knife.
Step 2: Get some skill.

I can cut cheese thinner, quicker and more accurately with a good quality sharp knife then either of the 2 cheese slicers I own.

I noticed in Switzerland all the supermarkets stock fondue cheese mix pre-grated and mixed in the right proportions.

Plus a lot of pretty epic chocolate which makes the non-Swiss stuff taste like cat doo in comparison.
