I have been following the Game of Thrones leaks for weeks now and they have been 100% true.
The show will have honestly the worst ending you can imagine. It's worse than Dexter, and Sopranos combined.

Jon Snow kills Dany because he is upset about her burning people. Drogon flies away with Dany's body. Jon Snow leaves for the Night Watch. Bran the cripple is declared King with Tyrion as his hand.

I read about Stoneheart on one of the GoT wikis. I can't figure out why a band of outlaws would follow around a hideous, murderous, pitiless zombie noble. Maybe she has a romance with the zombie king later and they have a bunch of little Starks beyond the wall.
The unsullied were supposed to be much "cooler" in the books. Plate armor and tower shields or some such. I think the show's version looks better, though.

Vast parts of the finale made no sense.
I do have a "thank god that's over" reaction. It ended up a rather different show from what it was like when it started. Also, Season 8 voted Least Nudity EU 2019.

I've started watching Letterkenny after being recommended it. I appreciate the effort they've put into writing the jokes from what I've seen. It's pretty tight.
Skimmed through the youtube series. I know it's a redneck comedy thing and all but did they evolve at all past the occasional cutely spooked homophobic joke?

The series or the jokes? Was like a six episode webseries before it became a TV show, I guess. I watched that. Some of it was alright but there was a lot of low hanging fruit.
The jokes. That is essentially how I feel. Of what I've watched, some episodes have been very amusing, whereas others were super predictable and made ~25 minutes feel slow.
