Try a joystick that is how I fly. Please do us all a favor practice off-line.
Practice! Preferably on a local server so as to not piss off all the people who do know how to use the choppers and jets.

make ur speed up and down your arrows and the left and right arrows your left and right movement then with your mouse make that your rotate or whatever its called so up pulls you up down pulls you down etc...

dude, start a lan and open sharqi, it will take you about 30 to get used to flying the choppers, then start practicing lining up targets like jeeps and tanks and shit lying around the map, you will be fine. fly in and around the buildings once you get used to it, helps for when u get into a tight situation when piloting online.
i use the mouse and keyboard, mouse to stablise the chopper, move it up to tilt forward to move foreward etc.
then w and s. or whatever you use to change the speed of the blade rotation, holding w to keep them rotating as fast as posible. and s to slow them down, if you take your fingers off it will hover. then use a and d to rotate the chopper itself.
im not sure if that will help, but its the most simple way of explaining it. its easier to just get in the chopper and experience the way it handles.

I fly using keyboard only without mouse. Its more comfortable for me. But i have problems with the jet MG, because, the aiming is to difficult with keyboard. Any advice? I guess "practice", right?

I randomly took an attack chopper last nightk, and piloted it for a whole 5-7 minutes before getting shot down! In previous offline attempts, I kinda flipped over after 3 seconds and died

You get good at it after awhile. To the point when you can change viewpoints while you're flying. *Hit C*
So when someone is tailing me I can see them through the rear view and maneuver.
Plus I can tell if a pilot is roguing. Cheap but effective. =P
Btw I use a laser mouse and keyboard. My joystick broke while I was flying awhile back.
