...So I need to choose one patch to patch to, nothing that's 1.21 or 1.3 or even 1.4. So which one has more servers? Any suggestions? Or if you can convince me to patch to 1.3...Go for it.

Realy tough to decide to be truthful. Go 1.3 If your ok with The occasional crash.
1.4 if your smart with installing re-installing . backups etc. And the lack of servers.
1.21 if your ok going back to stone age, but without crashing.

Nothing in 1.21+...Unless you can convince me. I miss dolphin diving and C4 throwing. And I can't uninstall and reinstall, I had to borrow my third BF2 disc, and have already mailed it back.

Right click-> paste.
First copy the unpatched version so you have 2x1.0
then patch other to what ever you want like 1.21 so then you have 1.0 and 1.21 and copy that if you want to have third one that is 1.30 and so on...
you just have to rename the versions folder you want to play to battlefield 2 and others can have the version number at the end or something else

1.12 now has VERY VERY EXTREMLY unstable servers, 1.03 only has like 3 and 1.4 is... well i fucked it up and cant be bothered to make a new backup
