Select the weapon again. Just press the key its assigned to.
Your main weapon is tied to the "3" key. The default setting for weapons is in either the 3 round burst or automatic fire setting. Press the "3" key again, or re-select the weapon again with the mouse wheel, and the fire mode will be changed to semi-automatic (a.k.a. single shot).

Or, if you dont like using the buttons, wheel up one and then down one and left click.
But using the button is much better.
