I am a huge Chipotle/Qdoba junkie, but the last few times I went they were out of their awesome guacamole. That's almost like going to Pizza Hut and being told they have no tomato sauce for the pizzas... which is a big no-no in my book.

So we crafted our own concoction and it turned out pretty close (and tasty) the the real stuff, and so I thought I'd share it in case there's other addicts in withdrawal.

Ingredients:
* 1 Large avocado, ripe
* 4 tbsp cup Red onion, minced
* 1 Garlic clove, minced
* 2 Tbsp Cilantro, chopped
* 1/2 Lime's juice
* Salt

Instructions:
Ok it's very easy to do this. Wash everything (duh). Mince the onion/garlic with a knife... which just means chop it into really small pieces. I personally don't like to bite into a big piece of onion, but it does add some good taste so tiny pieces accomplish both tasks. Same for the garlic.

Next, take a bunch of cilantro leaves from the bunch without the stem (it's a pain in the ass, so if you are lazy, a few stems won't kill it), place on your cutting board and chop away. It's guacamole, not French cuisine, so whatever comes out is perfectly fine.

Odds are, most of you don't own a mortar and pestle... soo to make things simple, peel the avocado, chop it into a few big chunks, and toss it into a bowl (cereal bowl works fine). Add the lime juice at this point since it helps soften the avocado and with the back of a spoon, guacamole it up. If you don't have limes, lemon will do I suppose.

Toss the other ingredients in, keep mashing with the spoon, and finally add some salt to taste. If you did things right (there's no way to screw it up, so you did), it should look like a big green mess. Finally take your chips or whatever you want and enjoy.
