Asiago, its stong flavor and firm hold allows for versatility. It goes well in many things like eggs and crackers.

Mature Cheddar from this farmer near Cheddar gorge which is just down the road.
Its great stuff relatively solid but easy as hell to cut and great on top on digestive biscuits or with a bit of apple.

...mm for cheap cheeses, i'd have to say a hard gouda, parmesiano or a light camembert. yes; they are among the cheap cheeses.

I like aged spiced gouda.... cumin seeds make this the best.
