First of all, this wasn't a flight accident it was a medical condition. It has nothing to do with flight safety.
The crew goes through first aid training and they have equipment with them but it's not a hospital.
Flying is safe because the pilots and cabin crew are highly trained for the task and the equipment is reliable and kept in good condition (atleast in most western comppanies). Unlike cars, aircraft don't fly unpredictably. Routes are planed and onboard systems as well as ATC will notify if a plane is heading into an other planes route.
