In that case, I have an OCZ 600W (see sig for specs), would that power a GTX280/GTX260 fine?  NewEgg suggest "600W minimum" for some those cards, I'm sure if this is crap or legit.
yes it will be fine.  nice PSU buddy.

Are you buying it new?  If so, where?  Sounds like a good site to bookmark.

If you're using an 8/9 series card (like the one in this thread) dedicated for physics does it need full speed x16 pcie?

Even PCI-E x1 has about enough bandwidth for physics. But, as always, more is better.
The idea of any hi-fi system is to reproduce the source material as faithfully as possible, and to deliberately add distortion to everything you hear (due to amplifier deficiencies) because it sounds 'nice' is simply not high fidelity. If that is what you want to hear then there is no problem with that, but by adding so much additional material (by way of harmonics and intermodulation) you have a tailored sound system, not a hi-fi. - Rod Elliot, ESP

What are ideal temps for this card?

At idle:

Fan @ auto     67C
Fan @ 30%     67C
Fan @ 50%    54C

I have heard that this card runs hot, so are these temps ok?

Auto will do it just fine.
