So I'm in charge of making the roast for tomorrows fathers day feast.

I have a six pound dry aged prime rib roast at $10.00 per pound from a gourmet meat shop.

I usually make a paste of garlic, salt, pepper, rosemary and basil with olive oil and coat the roast in that and slow cook at 250 degrees.

Many recipes call for cooking at 500 degrees first then at 350.

Tips, tricks or comments?

How long do you slow cook it?  Do you constantly add the paste/glaze?  Do you poke holes in it at all?  What do you roast it in/on?

I roast it about one hour per pound. No holes but I do mostly sever the bones and pack that slot with garlic before binding it with twine.

The herb paste acts as a shield and forms into a nice crust that locks in the juices. I roast it on a cookie cooling rack, over a cassarole dish. The juices drip down into the dish and are used to make the ah jew.

I also make homemade horseradish sauce.

Sure.  I've never made a roast before but I'm sure I'll try one of these days.  I don't like shoving thing in the oven (save for the Mac and cheese I make) but I'd like to try.

One tip; do not dry age roasts in your refrigerator as you may get ill and contaminate your unit. Buy them dry aged or just go for it right from the store. Also, don't cook it until it is been out of the refrigerator for about an hour for even cooking.

You know why 0 farenheit is where it is? Cos mr farenheit decided that the coldest temperature he could achieve with his equipment should be zero. Nowt thats scientific. Add to that the units have the same magnitude as celsius, its jus an obsolete and silly way or measuring temperature
