Basically the longest maps are the ones that start off with one team having control of all or nearly all the flags on the map at the start, and the other team starting out from an uncapable base. For it to be a long game, attacking side must capture at least one flag early in the game to stop ticket bleed, and the defending side must not lose all their flags aka get wiped out. Examples are Dragon Valley, Kubra Dam, Strike at Karkand, Sharqi Peninsula, etc.
Maps with all flags neutral at the start and both sides having to start out from their own uncappable base tend to end fast if one team holds more than half the available flags on the map and hence ticket bleed the opposition. Examples are Mashtuur City, Zatar Wetlands, Dalian Plant, Songhua Stalemate, FuShe Pass, etc.
